If you’ve been reading this blog for any length of time, you probably know that I love rich, cheesy, garlicky, bread-y things.  This pull apart bread recipe is the ultimate culmination of all my food loves.  I have a feeling if you try it, it will be yours too.
PS – If you’re vegetarian, just leave out the bacon – this will still be super delicious!
This pull apart bread has a lot going for it.
  1.  It’s pretty cheap to make – a loaf of bread, a few pantry staples, and a bit of bacon and cheese (which if you’ve stocked your fridge and stocked your freezer well, should be cheap too).
  2. It’s easy to make – Seriously.  Cut open some bread.  Stuff it with delicious things.  Bake.  Devour.  (Repeat if desired.)
  3. It could be made ahead of time.  Always a bonus in my books!
  4. It is  Just.  So.  Freaking.  Delicious.
Okay, I’m not going to ramble on about this.  It’s a pretty simple recipe.  Instead of reading How to Make Friends and Influence People, you can just make this pull apart bread.  Same result, much more delicious 🙂

Ingredients
  • 1 loaf bakery bread I used a large French loaf. Sourdough or Italian would also be delicious
  • 1/2 pkg bacon Whatever size package you have is fine
  • 5 cloves garlic
  • 1/4 cup butter melted
  • 2 tbsp dried parsley
  • 1-2 cups cheese depending on size of loaf and how cheesy you want your bread. I like mozzarella for it's melty-ness but you can use whatever you want

Instructions
  1. If you're planning to bake this right away, preheat your oven to 350 degrees F.  Cook bacon however you like (I like to cook small amounts of bacon in the microwave).
  2. Make a series of diagonal slits in your loaf of bread, but don't cut all the way through - leave an inch or two connected at the bottom of the loaf. Rotate the loaf and make a series of diagonal slits in the other direction, so you create a bunch of diamonds.  Gently use your hands to separate the bread.
  3. Shred cheese.  Peel and mince garlic.  Chop cooked bacon into bite sized pieces.
  4. In a small bowl, combine melted butter (if your loaf is smaller, you could go with a little less butter - say 2-3 tablespoons) with dried parsley and the minced garlic.
  5. Set your loaf on top of a large sheet of foil.  Use a spoon to drizzle the garlic parsley butter into all the cracks and crevices.  Use your fingers to gently pull the bread apart so you can get right in there.
  6. Add the chopped bacon and the shredded cheese, making sure you get into all the little nooks and crannies.
  7. Wrap foil around the loaf but don't press it tightly to the top - you don't want all your lovely cheese to stick to the foil after it's melted.
  8. Wrap the loaf into a neat little package and if it's a big loaf like mine, you can set it on a cookie sheet.  Bake for about 15 minutes, or until cheese is well melted and loaf is heated through.

Shred 1-2 cups of cheese.  How much cheese you need will depend on how big your loaf is (mine was enormous) and also, how cheesy you want the final product to be.  Peel and mince 5 cloves of garlic.  Chop cooked bacon into bite sized pieces.
